Ingredients
  

  • 1 lb grilled chicken breast sliced
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn grilled or canned
  • 1 can black beans drained and rinsed
  • 1 bell pepper diced
  • 1 avocado diced
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/4 cup cilantro chopped
  • 1/2 cup barbecue sauce
  • 1 lime juiced

Method
 

  1. First, prepare the chicken breast by marinating it in your favorite seasoning and grilling until cooked through and juicy.
  2. While the chicken cooks, chop the romaine lettuce and place it in a large serving bowl.
  3. Next, rinse and drain the black beans, halve the cherry tomatoes, and dice the bell pepper and avocado. Toss them into the salad bowl with the prepared lettuce.
  4. Once the chicken is done, slice it finely and add it to the bowl.
  5. Then, drip the barbecue sauce over the salad and add the lime juice. Toss gently until everything is well coated.
  6. Finally, sprinkle the shredded cheese and chopped cilantro over the top for a fresh finish.
