- In a skillet over medium heat, brown the ground beef until fully cooked, about 8-10 minutes.
- Stir in the taco seasoning and follow package instructions, usually adding water and simmering.
- While the beef simmers, prepare the salad base: chop the Romaine lettuce and place it in meal prep containers.
- Layer in the warm, seasoned beef over the lettuce, followed by a sprinkling of cheese, cherry tomatoes, and diced avocado.
- Top with sour cream and salsa, then drizzle a light squeeze of olive oil over the whole masterpiece.
- Store in the fridge until ready to eat—each meal will meld those fabulous flavors together even more!
