  • 4 boneless skinless chicken breasts
  • 1 cup fresh spinach chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup cream cheese softened
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the chopped spinach, feta, cream cheese, minced garlic, dried oregano, and a pinch of salt and pepper.
  3. Using a sharp knife, carefully create a pocket in each chicken breast. Be gentle to avoid cutting all the way through.
  4. Stuff each chicken breast with the spinach and feta mixture, pressing firmly to encase the filling.
  5. Heat olive oil in a skillet over medium heat. Season the chicken with paprika, salt, and pepper, then sear each side for 3-4 minutes until golden.
  6. Transfer the seared chicken to a baking dish and bake in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let it rest for 5 minutes before slicing.
