- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, feta, cream cheese, minced garlic, dried oregano, and a pinch of salt and pepper.
- Using a sharp knife, carefully create a pocket in each chicken breast. Be gentle to avoid cutting all the way through.
- Stuff each chicken breast with the spinach and feta mixture, pressing firmly to encase the filling.
- Heat olive oil in a skillet over medium heat. Season the chicken with paprika, salt, and pepper, then sear each side for 3-4 minutes until golden.
- Transfer the seared chicken to a baking dish and bake in the preheated oven for about 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let it rest for 5 minutes before slicing.
