Ingredients
  

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • Juice and zest of 2 lemons
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • Salt and pepper to taste
  • Skewers wooden or metal

Method
 

  1. Prepare the marinade by whisking together the olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper in a mixing bowl.
  2. Cut the chicken breasts into 1-inch cubes and add them to the marinade, tossing to coat evenly. Let it marinate for at least 30 minutes, or up to 2 hours in the fridge.
  3. Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking.
  4. Preheat your grill to medium-high heat and lightly grease the grates with oil.
  5. Place the skewers on the grill and cook for about 10–12 minutes, turning frequently until the chicken is cooked through and reaches an internal temperature of 165°F.
  6. Remove the skewers from the grill and let them rest for 5 minutes before serving.

Notes

For a make-ahead option, marinate the chicken the night before. To reheat leftovers, simply warm them on a skillet over low heat to maintain juiciness.
