- Prepare the marinade by whisking together the olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, salt, and pepper in a mixing bowl.
- Cut the chicken breasts into 1-inch cubes and add them to the marinade, tossing to coat evenly. Let it marinate for at least 30 minutes, or up to 2 hours in the fridge.
- Thread the marinated chicken onto skewers, leaving a little space between each piece for even cooking.
- Preheat your grill to medium-high heat and lightly grease the grates with oil.
- Place the skewers on the grill and cook for about 10–12 minutes, turning frequently until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove the skewers from the grill and let them rest for 5 minutes before serving.
Notes
For a make-ahead option, marinate the chicken the night before. To reheat leftovers, simply warm them on a skillet over low heat to maintain juiciness.
