Deliciously Fresh Seafood Pasta Salad Recipe

This vibrant Seafood Pasta Salad combines fresh seafood, crunchy vegetables, and a zesty dressing, making it an ideal dish for summer gatherings and picnics.

Ingredients
  

  • 8 oz. pasta fusilli or penne
  • 1 lb. cooked shrimp peeled and deveined
  • 1 cup cooked crab meat
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup bell pepper diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Method
 

  1. Cook the pasta according to package instructions until al dente.
  2. In a large bowl, combine the cooked pasta, shrimp, crab meat, tomatoes, cucumber, red onion, and bell pepper.
  3. In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Pour the dressing over the pasta and seafood mix; toss gently to combine.
  5. Fold in the fresh parsley last.
  6. Chill the salad in the fridge for at least 30 minutes before serving.
