Method
- Preheat your oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips.
- Sprinkle salt on the zucchini slices and let them sit for 10 minutes.
- Pat the zucchini dry with a paper towel to remove extra moisture.
- In a bowl, mix the ricotta cheese, Parmesan, garlic powder, salt, and pepper until combined.
- Lay a zucchini slice flat, add a spoonful of the ricotta mixture at one end, and roll it up tightly.
- Repeat with the remaining zucchini slices and ricotta mixture, placing the roll-ups seam-side down in a baking dish.
- Pour the marinara sauce over the top of the zucchini roll-ups, ensuring they’re well-coated.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for another 5 minutes.
- Garnish with fresh basil before serving warm from the oven.
