Ingredients
  

  • 4 medium zucchini
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh basil leaves for garnish

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips.
  3. Sprinkle salt on the zucchini slices and let them sit for 10 minutes.
  4. Pat the zucchini dry with a paper towel to remove extra moisture.
  5. In a bowl, mix the ricotta cheese, Parmesan, garlic powder, salt, and pepper until combined.
  6. Lay a zucchini slice flat, add a spoonful of the ricotta mixture at one end, and roll it up tightly.
  7. Repeat with the remaining zucchini slices and ricotta mixture, placing the roll-ups seam-side down in a baking dish.
  8. Pour the marinara sauce over the top of the zucchini roll-ups, ensuring they’re well-coated.
  9. Cover with foil and bake for 25 minutes, then remove the foil and bake for another 5 minutes.
  10. Garnish with fresh basil before serving warm from the oven.
